This innovative twist on a classic favorite, pasta, offers a perfect harmony with the sweet and buttery Delicata squash. The squash, the star of today's dish, is a real treat in the colder months and its appealing stripes make it Instagram worthy right from the get-go. We're keeping it American, with a nod to the hearty and comforting dishes we all come to crave when the temperature dips. But with delicate strands of spaghetti tossed in a delectable sauce, featuring Delicata, we're taking the American flair up a notch.
Ingredients (for 4)
- Delicata squash - 1 large - seeded and sliced to 1/2 inch crescents
- Spaghetti - 12 oz
- Olive oil - 4 tablespoon
- Garlic cloves - 4 - thinly sliced
- Red pepper flakes - 1 teaspoon
- White wine - 1/2 cup
- Grated parmesan cheese - 1 cup
- Bacon - 4 slices - cooked and crumbled
- Chopped herbs (parsley or basil) - 2 tablespoons
- Lemon zest - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - π‘οΈπ₯£π₯Preheat the oven to 425Β°F (220Β°C). Toss the delicata squash with 1 tablespoon of olive oil and salt & pepper to taste. Lay the slices in a single layer on a baking sheet.

Step 2 - π₯π₯β±οΈRoast the squash until they're tender and lightly browned for about 20 minutes. Remember to turn them midway!

Step 3 - ππ§β²οΈWhile the squash is in the oven, cook the spaghetti according to the package instructions until al dente. Drain the spaghetti but keep a cup of the pasta water.

Step 4 - π³π§πΆοΈIn a large skillet, warm the remaining olive oil over medium heat, add the sliced garlic and red pepper flakes. Cook until the garlic releases its aroma, which should take about 1 minute.

Step 5 - π·π³πͺPour the white wine into the skillet and let it reduce by half. Stir in the roasted squash and cook for a couple of minutes, mashing some of the pieces to create a thick sauce.

Step 6 - π₯£π§πMix the drained pasta into the skillet, adding the reserved pasta water, bit by bit, until the sauce reaches your desired consistency.

Step 7 - π§π₯£π«Stir in the grated Parmesan cheese until it is fully melted and evenly distributed throughout the pasta.

Step 8 - π βοΈπ«Taste your pasta dish and adjust the seasoning with more salt and pepper, if needed.

Step 9 - π₯πΏπJust before you serve, garnish the dish with crumbled bacon, chopped herbs, and lemon zest.
Additional
For a vegetarian version, skip the bacon. If Delicata squash is not available, Butternut squash makes a good substitute. The kids can help by picking and choosing their favorite herbs!
