We're keeping it American, with a nod to the hearty and comforting dishes we all come to crave when the temperature dips. But with delicate strands of spaghetti tossed in a delectable sauce, featuring Delicata, we're taking the American flair up a notch.

Ingredients (for 4)

    Preheat the oven to 425Β°F (220Β°C). Toss the delicata squash with 1 tablespoon of olive oil and salt & pepper to taste. Lay the slices in a single layer on a baking sheet.

    Roast the squash until they're tender and lightly browned for about 20 minutes. Remember to turn them midway!

    While the squash is in the oven, cook the spaghetti according to the package instructions until al dente. Drain the spaghetti but keep a cup of the pasta water.
