Let's escape the summer buzz with an elevated twist on comfort food. The star of the show is the humble tomato, packed with flavor and vitamins, perfect for a healthy yet hearty main course. With a mix of savory bacon, sweetness from corn, and a silky film of a light tomato-gravy, this dish will make your taste buds dance with delight.
Ingredients (for 2)
- Medium size ripe and juicy tomato - 6 - halved
- Fresh corn ears - 2 - husked and kernels removed
- Slices of bacon - 4 - chopped into large pieces
- Garlic cloves - 2 - minced
- Small onion - 1 - finely chopped
- Red chili flakes - 1/2 teaspoon
- Chicken broth - 1 cup
- Fresh parsley - 2 tablespoons - chopped
- Olive oil - 2 tablespoons
- Country bread slices - 2 - halved and lightly toasted
- Salt - to taste
- Pepper - to taste

Step 1 - 🥓🔥🥘Heat a large pan over medium heat. Add the chopped bacon and cook until crispy. Remove bacon with a slotted spoon and set aside for later.

Step 2 - 🧅🌶️🍳In the same pan with leftover bacon grease, cook the finely chopped onion, minced garlic, and red chili flakes until the onions are translucent.

Step 3 - 🌽🥘🔥Add the corn kernels to the pan, sautéing until they become golden. This should take around 5-7 minutes.

Step 4 - 🍅🍲🔥Add the halved tomatoes, chicken broth, salt, and pepper to the pan. Cook on low heat under a lid for 15 minutes, letting the tomatoes soften and release their juice.

Step 5 - 🥓🍅🥘Once the tomato juices are reduced, put the crispy bacon back in the pan. Make sure everything is well-mixed.

Step 6 - 🍞🍅🍽️When serving, place a piece of toasted bread on each plate. Spoon the tomato mixture on top, ensuring some of the light tomato gravy is included. Finally, garnish with fresh parsley.
Additional
This recipe can be adapted to add some summer squash or zucchini for more veggie goodness, or potatoes for additional heartiness. You could also sprinkle some cheese on top and broil for a minute or two for a cheesy version.
