This Pasta dish is inspired by French cuisine and incorporates seasonal ingredients like asparagus and lemon. The dish is made with spaghetti, which is cooked in a lemony white wine sauce and served with pan-seared scallops and blanched asparagus. The flavors of this dish are bright, fresh and perfect for a summer evening dinner.

Ingredients (for 4)

Preparation

  1. Step 1 - 🍝🍜🌊
    Bring a large pot of salted water to a boil and cook spaghetti according to package instructions. Drain and set aside.
  2. Step 2 - 🍳🦐🔥
    Heat a large skillet over medium heat. Add 1 tbsp of olive oil and pan-sear scallops for about 2-3 minutes per side until they have a crust and are cooked through. Remove from skillet and set aside.
  3. Step 3 - 🧅🧄🍳
    Add the remaining olive oil and butter to the same skillet. Add chopped shallots and sauté for 2-3 minutes until they soften and become translucent. Add minced garlic and sauté for another 30 seconds.
  4. Step 4 - 🍷🍋🧂
    Add dry white wine to the skillet and bring to a simmer. Squeeze fresh lemon juice and add 1 tbsp of lemon zest to the skillet. Season with salt and pepper and reduce the heat to low.
  5. Step 5 - 🍝🌿🍴
    Add the cooked spaghetti and blanched asparagus to the skillet and toss until they are coated with the sauce.
  6. Step 6 - 🦐🥄🍝
    Add the pan-seared scallops to the skillet and gently toss everything together.
  7. Step 7 - 🍴🧀🌿
    Divide into 4 plates and sprinkle Parmesan cheese and parsley on top.
  8. Step 8 - 🔥🍝🍴
    Serve hot.

Additional

To switch up the protein, you could also use shrimp or chicken in place of scallops. For a vegetarian option, leave out the protein altogether and add sautéed mushrooms or cherry tomatoes to the dish instead.
