Ingredients (for 2)
- Medium-sized carrot - 2 - cleaned and chopped
- Salmon fillet - 2 portions - skin-off
- Fresh shrimp - 8 pieces - peeled and deveined
- Scallop - 6 pieces - cleaned
- Olive oil - 2 tablespoons
- Butter - 1 tablespoon - for carrot purée
- Fresh cream - 3 tablespoons - for carrot purée
- Nutmeg - pinch - for carrot purée
- White wine - 1 cup - for curry glaze
- Shallot - 2 - minced for curry glaze
- Garlic clove - 1 - minced for curry glaze
- Ginger - 1 teaspoon - grated for curry glaze
- Curry powder - 1.5 teaspoons - for curry glaze
- Honey - 1 tablespoon - for curry glaze
- Lemon juice - 2 tablespoons - for curry glaze

Step 1 - 🥕💦🌪️Simmer the carrots with 1 cup of water until soft. Blend them with butter, fresh cream and a pinch of nutmeg to get a smooth purée. Keep it warm.

Step 2 - 🐟🦐🔥Season your salmon fillet, shrimp and scallops with salt and pepper. Heat oil in a pan and sear them until golden. Remove and keep aside.

Step 3 - 🍲🍯🍋In the same pan, sauté minced shallots, garlic and ginger. Add curry powder followed by white wine, honey and lemon juice. Allow it to reduce to a glazy consistency.

Step 4 - 🍽️🥕🍤Spread a spoonful of carrot purée on the plate, place the seafood on it and drizzle with the curry glaze. Sprinkle with chopped chives and serve immediately.
Additional
Engage kids in peeling and chopping carrots. The dish can be made vegetarian by substituting tofu for seafood and veggie broth for the white wine. The lively colors make it an Instagram sensation too!
