This Japanese-inspired main course recipe is perfect for a warm February day. Soba noodles made from buckwheat flour are tossed with a flavorful sesame-soy dressing and topped with seared salmon, fresh vegetables, and edible flowers for a dish that's both seasonal and beautiful.

- Soba noodles - 6 oz
- Salmon fillet - 2
- Soy sauce - 1/4 cup
- Sesame oil - 1/4 cup
- Rice vinegar - 2 tbsp
- Honey - 1 tbsp
- Garlic clove - 1 - minced
- Ginger - 1/2 tsp - grated
- Cucumber - 1/2 cup - sliced
- Radish - 1/2 cup - sliced
- Neutral oil - 2 tbsp - for cooking
- Salt - to taste
- Pepper - to taste

Step 1 - 🥢🥡👨🍳Whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger in a small bowl to make the dressing.

Step 2 - 🍜🍜🌊Cook soba noodles in a large pot of salted boiling water according to package instructions. Drain and rinse with cold water to stop cooking. Toss with the sesame-soy dressing and set aside.

Step 3 - 🍣🐟🍳Heat neutral oil in a pan over medium-high heat. Season salmon fillets with salt and pepper on both sides. Sear for about 3-4 minutes on each side, or until cooked to your liking.

If you can't find edible flowers, you can use other fresh herbs like cilantro or basil for a pop of color. You can also try this recipe with other types of fish, like trout or arctic char. To make it gluten-free, use tamari or coconut aminos instead of soy sauce.
