Our main course is a creative twist on French cuisine, featuring rich, earthy Shiitake mushrooms. We're escaping the predictable by taking cues from the classic French coq au vin but using Shiitake mushrooms as the heart of the dish, resulting in a satisfying vegetarian interpretation.

    Preheat your oven to 375°F.

    In a large oven-safe skillet over medium heat, warm the olive oil. Add the shiitake mushrooms and cook until golden brown. Remove mushrooms from skillet and set aside.

    In the same skillet, add the halved potatoes and stir until golden brown, then remove and set aside with the mushrooms.

    Sauté the shallots and garlic in the skillet until they're soft and translucent.

    Pour in the red wine, bringing it to the boil, then reduce to simmer. Let it simmer until the volume is reduced by half.

    Add the vegetable stock, butter, sugar, thyme, bay leaves, and the set-aside mushroom-potato mix to the skillet. Stir gently to combine, and season with salt and pepper.

    Transfer the skillet to the preheated oven, uncovered, and let it braise for about 30 minutes.

    While the mushrooms are in the oven, quickly blanch the green beans in boiling water, then drain and set aside.
