This is a unique and visually striking take on a traditional American appetizer, featuring Shiitake mushrooms. The mushrooms are known for their meaty texture and earthy flavor, adding a depth of taste and enhancing the overall dish. We also add a seasonal touch by incorporating winter root vegetables.
Ingredients (for 4)
- Fresh shiitake mushrooms - 8.8 ounces - sliced
- Small beetroots - 2 - peeled and diced
- Medium carrots - 2 - peeled and diced
- Small parsnip - 1 - peeled and diced
- Whole grain baguette - 1 - cut into thin slices
- Olive oil - 2 tablespoons
- Clove of garlic - 1 - minced
- Salt - to taste
- Black pepper - to taste
- Chives - for garnish - finely chopped
Preparation

Step 1 - 🌡️🥕🧂Preheat your oven to 400F. Toss the diced beetroots, carrots and parsnip in 1 tablespoon of olive oil. Season them with salt and black pepper.

Step 2 - 🥕🔥⏲️Arrange your seasoned vegetables on a baking tray and roast for 30-35 minutes until they are tender.

Step 3 - 🍳🍄🧄While your vegetables are roasting, heat the remaining olive oil in a pan over medium heat. Add the minced garlic, and sauté until fragrant. Then add the sliced shiitake mushrooms. Season them with salt and pepper, and cook until golden.

Step 4 - 🍞🔥🔄Once your vegetables and mushrooms are done, you can prepare the baguette. Simply toast the thin slices until crisp.

Step 5 - 🥖🍄🌿To assemble, spoon a generous amount of shiitake onto each slice of toast. Then add the roasted vegetables. Finish your dish by adding a garnish of freshly chopped chives before serving.

This recipe can be customized with different kinds of mushrooms and root vegetables based on the season. You can also add cheese like goat or feta for an extra touch. Even kids can enjoy making this recipe, especially arranging the toppings on the toast!
