    Preheat your oven to 400F. Toss the diced beetroots, carrots and parsnip in 1 tablespoon of olive oil. Season them with salt and black pepper.

    Arrange your seasoned vegetables on a baking tray and roast for 30-35 minutes until they are tender.

    While your vegetables are roasting, heat the remaining olive oil in a pan over medium heat. Add the minced garlic, and sauté until fragrant. Then add the sliced shiitake mushrooms. Season them with salt and pepper, and cook until golden.

    Once your vegetables and mushrooms are done, you can prepare the baguette. Simply toast the thin slices until crisp.

    To assemble, spoon a generous amount of shiitake onto each slice of toast. Then add the roasted vegetables. Finish your dish by adding a garnish of freshly chopped chives before serving.
