In this innovative recipe we will infuse traditional Indian flavors into the humble celery stalk, slow-cooked to perfection. The star of our dish, celery, is paired with aromatic Indian spices to make a heartwarming and unique dish.
Ingredients (for 4)
- Celery stalks - 10 - finely chopped
- Almond milk - 2 cups
- Large onion - 1 - finely diced
- Garlic cloves - 2 - minced
- Ginger piece - 1-inch - finely grated
- Turmeric - 1 teaspoon
- Garam masala - 1 tablespoon
- Cayenne pepper - 1/2 teaspoon
- Lime - 1 - juiced
- Fresh coriander - 1/2 cup - chopped
- Almonds - 1/4 cup - slivered
- Vegetable oil - 2 tablespoons
- Salt - to taste
Preparation

Step 1 - 🔥🥘🧅Heat vegetable oil in a pan over medium heat, add onions and sauté until they are softened.

Step 2 - 🥄🧄🌶️Stir in garlic, ginger, turmeric, garam masala, and cayenne pepper. Cook until the mixture is fragrant.

Step 3 - ↪️🥣🥛Transfer the mixture into a slow cooker. Add chopped celery, almond milk, and salt. Stir well to incorporate all the ingredients.

Step 4 - 🔥⏲️🔛Cover the slow cooker and set it on low heat for 6 to 8 hours or high heat for 3 to 4 hours.

Step 5 - 🍈🌱🥣Before serving, sprinkle the curry with lime juice, fresh coriander, and slivered almonds.

Did you know? In traditional Indian cooking, Korma is a dish where meat or vegetables are braised with yogurt or cream. But in our vegan version, we use almond milk! It's a great way to introduce kids to new flavors - let them help with the garnishing!
