In this innovative recipe we will infuse traditional Indian flavors into the humble celery stalk, slow-cooked to perfection. The star of our dish, celery, is paired with aromatic Indian spices to make a heartwarming and unique dish.
Ingredients (for 4)
- Celery stalks — 10 — finely chopped
- Almond milk — 2 cups
- Large onion — 1 — finely diced
- Garlic cloves — 2 — minced
- Ginger piece — 1-inch — finely grated
- Turmeric — 1 teaspoon
- Garam masala — 1 tablespoon
- Cayenne pepper — 1/2 teaspoon
- Lime — 1 — juiced
- Fresh coriander — 1/2 cup — chopped
- Almonds — 1/4 cup — slivered
- Vegetable oil — 2 tablespoons
- Salt — to taste

Step 1 — 🔥🥘🧅Heat vegetable oil in a pan over medium heat, add onions and sauté until they are softened.

Step 2 — 🥄🧄🌶️Stir in garlic, ginger, turmeric, garam masala, and cayenne pepper. Cook until the mixture is fragrant.

Step 3 — ↪️🥣🥛Transfer the mixture into a slow cooker. Add chopped celery, almond milk, and salt. Stir well to incorporate all the ingredients.

Step 4 — 🔥⏲️🔛Cover the slow cooker and set it on low heat for 6 to 8 hours or high heat for 3 to 4 hours.

Did you know? In traditional Indian cooking, Korma is a dish where meat or vegetables are braised with yogurt or cream. But in our vegan version, we use almond milk! It's a great way to introduce kids to new flavors - let them help with the garnishing!
