This slow-cooker French-inspired dish leans into early-summer elegance with ripe nectarines, shallots, white wine, Dijon, and thyme. The nectarines melt slightly into the sauce, giving the chicken a glossy sweet-savory finish that feels refined but still comforting. Itβs seasonal, a little unexpected, and beautifully photogenic thanks to jewel-toned fruit and fresh herbs.
Ingredients (for 4)
- Large nectarine - 2 - cut into 8 wedges each
- Bone-in, skin-on chicken thigh - 8
- Medium shallot - 4 - peeled and halved lengthwise
- Garlic clove - 3 cloves - thinly sliced
- Dijon mustard - 1 tbsp
- Dry white wine - 3/4 cup
- Low-sodium chicken stock - 1/2 cup
- Fresh thyme - 2 tsp - leaves removed
- Flat-leaf parsley - 1 tbsp - chopped
- Lemon - 1 tsp - finely grated
- Lemon - 1 tbsp - juiced
- Honey - 1 tbsp
- Unsalted butter - 2 tbsp
- Cornstarch - 1 tbsp - mixed with 1 tbsp cold water (optional for thickening)
- Olive oil - 1 tbsp
- Kosher salt - 1 1/2 tsp
- Freshly ground black pepper - 1/2 tsp - freshly ground
Preparation
-
Step 1 - ππ§β«Pat the chicken thighs dry, then season all over with kosher salt and black pepper.
-
Step 2 - π³π₯πHeat olive oil in a large skillet over medium-high heat. Sear the chicken skin-side down for 4 to 5 minutes until deeply golden, then flip and cook 1 minute more. Transfer to the slow cooker.
-
Step 3 - π§ π§π³In the same skillet, cook the shallots for 2 minutes until lightly colored. Add the sliced garlic and cook for 30 seconds.
-
Step 4 - π·π―πΏPour in the dry white wine and scrape up any browned bits. Stir in the Dijon mustard, chicken stock, fresh thyme, honey, and lemon zest. Bring to a brief simmer.
-
Step 5 - π₯β³πPour the sauce mixture over the chicken in the slow cooker. Cover and cook on LOW for 4 to 5 hours, until the chicken is tender but not falling apart.
-
Step 6 - πββ²οΈAbout 30 minutes before serving, add the nectarine wedges around the chicken. Cover and keep cooking on LOW until the fruit is just tender and still holds its shape.
-
Step 7 - πππ½οΈCarefully move the chicken, shallots, and nectarines to a warm serving platter.
-
Step 8 - π§ππ₯Skim excess fat from the sauce if you like. Simmer the sauce, then whisk in the butter and lemon juice. For a thicker sauce, whisk in the cornstarch slurry and cook for 1 to 2 minutes.
-
Step 9 - πΏβ¨π½οΈSpoon the sauce over the chicken and fruit. Finish with chopped parsley, extra thyme sprigs, and a few more grinds of black pepper. Serve warm.
Additional
For extra color, add a handful of blanched green beans or a few purple basil leaves right before serving. If you prefer a more classic bistro mood, swap the nectarines for apricots or yellow plums. A quick tip for the best presentation: keep the nectarine wedges fairly thick so they stay intact and look luxurious on the platter.
