This Red Wine Celery Stew is a twist on the traditional French stew. The humble celery takes center-stage, soaking up the flavors of thyme, garlic, red wine and beef for a fall-worthy, hearty meal that'll warm your senses.
Ingredients (for 2)
- Large celery stalks - 4 - chopped into 1 inch pieces
- Beef stew meat - 500 grams - cubed
- Red wine - 1/2 bottle
- Garlic cloves - 2 - minced
- Fresh thyme - 2 tablespoons
- Large carrots - 2 - cut into rounds
- Beef broth - 2 cups
- Fresh parsley - - for garnish
- Olive oil - 2 tablespoons
- Salt and pepper - - to taste
Preparation

Step 1 - 🍳🥩✅Heat olive oil in a pan over medium-high heat. Brown the beef cubes on all sides and set them aside.

Step 2 - 🥕🥣🌿Layer the bottom of your slow cooker with chopped celery and carrots.

Step 3 - 🥩🥗🌿Place the browned beef on top of the vegetables, followed by the minced garlic and fresh thyme.

Step 4 - ☕🍷🥣Pour the beef broth and red wine over the mixture in the slow cooker.

Step 5 - 🕗🍲🔥Cover and cook on 'Low' for 8 hours or 'High' for 4 hours.

Additional
This meal pairs well with a glass of the same red wine you used for the stew. You could replace the beef stew meat with lamb for a different flavour profile. For those who love a kick, add 1/2 teaspoon of crushed red pepper flakes for some heat.
