This Slow Cooker Vietnamese-Inspired Trout Clay Pot offers an exciting twist to ordinary weeknight dinners. Combining fresh trout with the warmth of Vietnamese spices and a bit of slow cooking magic, you have a dish that's bursting with flavor and aroma. Ingredients (for 4)
- Trout fillets - 4 medium-sized - bones removed
- Vegetable oil - 2 tablespoon
- Fresh ginger - 1 thumb-sized piece - finely chopped
- Garlic cloves - 3 - finely chopped
- Bird’s eye chilies - 2 - finely chopped
- Brown sugar - 3 tablespoon
- Fish sauce - 4 tablespoon
- Lime juice - from 2 fresh limes - squeezed
- Spring onions - 2 - chopped
- Fresh cilantro - A handful - chopped
- Salt and pepper - To taste

Step 1 - 🐟🧂🌶️Season the trout fillets with salt and pepper and set them aside.

Step 2 - 🥣🌶️🍋In the slow cooker, add the oil, ginger, garlic, chilies, sugar, fish sauce, and lime juice. Stir them well to combine all ingredients.

Step 3 - 🐟👨🍳🔥Dip the trout fillets in the mixture, ensure they are well covered. Set the cooker on low and cook for about 2-3 hours or till the trout flake easily when tested with a fork.

Step 4 - 👀🍲💧During the last 30 minutes of cooking, give the fillets a stir without breaking them. Add more water if the sauce reduces too much.

Step 5 - 🐟🥣🌿Once done, carefully take out the trout fillets to a serving dish, pour over the sauce and garnish with the spring onions and cilantro.
