- Sweet potato - 1 large - peeled and cut into wedges
- Kale - 1 bunch - stemmed and chopped
- Olive oil - 2 tbsp - none

Step 2 - πΏππͺIn a small bowl, mix the cumin, smoked paprika, garlic powder, salt, and black pepper. Rub the spice blend all over the pork tenderloin. Set aside at room temperature while you prep the other ingredients.

Step 3 - π π₯πArrange the sweet potato wedges on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast for 20-25 minutes or until tender and golden brown.
