Ingredients (for 2)
- Atlantic shrimp - 12 pieces - peeled and deveined
- Rainbow chard - 1 bunch - leaves and stems separated and chopped
- Medium-sized potatoes - 2 - peeled and grated
- Eggs - 2 - lightly beaten
- Garlic - 2 cloves - minced
- Red bell pepper - 1 - roasted and peeled
- Mayonnaise - 1/2 cup
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Spices: paprika, cayenne pepper, salt and pepper - 1 tablespoon paprika, 1/2 teaspoon cayenne pepper, to taste salt and pepper
Preparation

Step 1 - 🍤🧂🕐Toss the Atlantic shrimp in paprika, cayenne, salt, and pepper and let them marinate for 15 minutes.

Step 2 - 🥔🥬🥚🧂🤏Combine the grated potatoes with chopped rainbow chard stems & leaves, garlic, lightly beaten eggs and season with salt and pepper. Squeeze out excess moisture from the mixture.

Step 3 - 🍳🔥🥞Shape the chard-potato mixture into small, flat cakes. Heat up a tablespoon of olive oil in a pan and fry the cakes until they're golden brown on both sides. Keep them warm.

Step 4 - 🍤🔥🍳Use the same pan to heat the remaining olive oil and sauté the marinated shrimp until they're opaque and cooked through, about 2-3 minutes on both sides.

Step 5 - 🌶️🍋🥄Blend the roasted red bell pepper, mayonnaise, and lemon juice until smooth. This, seasoned to your taste, will be your aioli.
