- Shrimp - 1.5 pounds - peeled and deveined
- Olive oil - 3 tablespoons

- Medium onion - 1 - diced
- Celery - 2 stalks - finely chopped
- Medium zucchini - 1 - diced
- Eggplant - 1 cup - diced
- Cajun seasoning - 1 tablespoon
- Fresh parsley - 1/4 cup - chopped
- Salt - to taste
- Black pepper - to taste
Preparation
