Ingredients (for 4)
- Fresh lemon thyme sprigs - a handful - no specific preparation needed here
- Chorizo sausage - 200 grams - cut into bite-sized pieces
- Feta cheese - 200 grams - crumbled
- Large eggs - 8 - whisked
- Baby spinach - 2 cups - raw and washed
- Red onion - 1 - finely chopped
- Multigrain bread - 4 slices - toasted

Preparation

Step 1 - 🍳🔥🥩Heat the olive oil in a large skillet over medium heat. Add the chorizo sausage and sauté until it releases its oils and becomes crispy.
