Ingredients (for 4)

Preparation

    Heat the olive oil in a large skillet over medium heat. Add the chorizo sausage and sauté until it releases its oils and becomes crispy.

    Add the finely chopped red onion to the skillet. Sauté until it softens and becomes translucent.

    Next, add the raw, washed baby spinach and cook until it wilts.
