Ingredients (for 4)
- Large sweet potatoes - 2 - peeled and diced
- Medium acorn squashes - 2 - halved and seeds removed
- Chopped kale - 2 cups - stems removed
- Cloves of garlic - 4 - minced
- Medium onion - 1 - finely chopped
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Olive oil - 2 tablespoons
- Fresh parsley - for garnish
- Balsamic glaze - for drizzle

Step 1 - 🔥🍽🎃Preheat the oven to 400°F. Brush the acorn squashes with olive oil, add salt and pepper, then place them cut side down on a baking sheet. Roast for 25-30 minutes or until tender.

Step 2 - 🍳🥔🧅Heat olive oil in a large skillet over medium heat. Add onions, sweet potatoes, and minced garlic. Cook until sweet potatoes are caramelized and onions are translucent.

Step 3 - 🥬🍲🌶Add the kale, cumin, paprika and salt to the skillet. Stir until well-mixed. Cook until the kale is wilted.

Step 4 - 🎃🥘🔄Once the squash are done roasting, remove from oven and flip. Evenly distribute the sweet potato and kale mixture into each squash half.

Step 5 - 🔥🕑🎃Return the stuffed squash to the oven and bake for another 10 minutes.

Additional
