An opus to cheese on this special day, combining the richness of camembert, the sharpness of cheddar, and the creaminess of ricotta in a fusion tart. This dish is approachable, yet extravagant, classic yet delightful.
Ingredients (for 4)
- Camembert cheese - 7.05 oz - sliced
- Sharp cheddar cheese - 5.29 oz - grated
- Ricotta cheese - 3.52 oz
- Sun-dried tomatoes - 6 - chopped
- Cherry tomatoes on the vine - 4
- Fresh rosemary - 2 sprigs
- Sweet shortcrust pastry sheet - 1
- Egg - 1 - beaten
- Olive oil - 2 tablespoons
- Salt and pepper - to taste

Step 1 - π₯π‘οΈπPreheat your oven to 180Β°C/350Β°F to get it ready for baking.

Step 2 - π₯βοΈπ₯Unroll the pastry sheet, cut two circles using a large round cutter and place them on a lined baking tray. Score a smaller circle inside each pastry round to form a border. Brush the borders with the beaten egg.

Step 3 - π₯§ππBake the pastry for 10 minutes or until lightly golden. Remove from the oven and press the center down if it puffed up during baking.

Step 4 - π§π π₯Spread a layer of ricotta on the base of each tart. Season it with salt and pepper. Top it with the grated cheddar cheese mixed with the sun-dried tomatoes.
