- Vegetable oil - 1 Tbsp.
- Soy sauce - 1 Tbsp.
- Mirin - 1 Tbsp.
- Sake - 1 Tbsp.
- Sugar - 1 tsp.
- Garlic - 2 cloves - minced
- Fresh ginger - 1 inch - minced
- Shiitake mushrooms - 4 oz. - stems removed, caps sliced
- Winter greens (such as kale or chard) - 2 cups - tough stems removed, roughly chopped
- Vegetable broth - 2 cups
- Sesame seeds - 1 Tbsp. - toasted
- Scallions - 3 - thinly sliced
- Salt - to taste
Preparation

Step 1 - 🍜💦🔥Cook udon noodles according to package instructions in a pot of boiling salted water. Drain and rinse with cold water.

Step 2 - 🍶🥢💥Whisk together soy sauce, mirin, sake, and sugar in a small bowl.

Step 3 - 🍄🔪🍳Heat up a large skillet or wok over medium-high heat with vegetable oil. Add garlic, ginger, and shiitake mushrooms. Cook until browned and tender.

Step 5 - 🍶🥄🍲Pour the soy sauce mixture and vegetable broth into the skillet and bring to a boil. Reduce heat and simmer for 5 minutes.

Additional
To make this dish even heartier, you can add some sliced tofu, chicken or shrimp. If you’re feeling creative, you can also switch up the winter vegetables based on what’s available. This is also a fun dish to make with kids, letting them sprinkle on the sesame seeds and scallions.
