A unique and captivating fusion of Vietnamese flavors, our star dish is the 'Vegan Bánh Xèo Tacos'. 'Bánh Xèo' is a sizzling pancake filled with delicious plant-based ingredients while 'tacos' impart a exciting twist to this traditional dish.
Ingredients (for 2)
- Rice flour - 1 cup - none
- Turmeric powder - 1/2 teaspoon - none
- Water - 1 cup - none
- Coconut milk - 1 cup - none
- Salt - 1/2 teaspoon - none
- Green onions - 2 - finely chopped
- Tofu - 1 cup - cubed and fried
- Purple cabbage - 1/2 cup - shredded
- Carrots - 1/2 cup - shredded
- Lettuce - 1/2 cup - shredded
- Cilantro - 2 tablespoons - chopped
- Jalapeño - 1 - sliced
- Vegan fish sauce - 1 tablespoon - none
- Sriracha sauce - 1 tablespoon - none
Preparation

Step 1 - 🥣🥛🌾Mix 1 cup rice flour, 1/2 teaspoon turmeric powder, 1 cup of water, 1 cup of coconut milk, 1/2 teaspoon salt, and 2 finely chopped green onions until you get a smooth mixture.

Step 2 - 🍳🥞🔥Heat a non-stick pan over medium heat. Pour about 1/4 of the batter into the pan, swirling it to create a thin pancake. Fry until the bottom is crispy and golden. Flip and cook the other side for a few minutes.

Step 3 - 🍳➡️🧻Take the pancake out of the pan, place it on a kitchen towel to drain any excess oil.

Step 4 - 🥕🥬🥗Fill each pancake with 1 cup fried, cubed tofu, 1/2 cup shredded purple cabbage, 1/2 cup shredded carrots, 1/2 cup shredded lettuce, 2 tablespoons of chopped cilantro and sliced jalapeño.

Step 5 - 🌮🌶️🍴Fold the pancake into a taco shape. Drizzle 1 tablespoon of sriracha sauce and 1 tablespoon of vegan fish sauce over the top, serve immediately.
