Vietnamese-Inspired BBQ Potato Skewers

Introducing a unique blend of Vietnamese tradition with the beloved BBQ, featuring potatoes as the star ingredient. The Vietnamese spice profile will give a special kick to the BBQ flavors, while the potato adds comforting fullness and an amazing crisp texture.
Ingredients (for 2)
- Large potato - 2 - cut into 2" chunks
- Large red bell pepper - 1 - cut into 2" squares
- Lemongrass stalk - 2 - finely chopped
- Garlic clove - 4 - minced
- Soy sauce - 3 tablespoons
- Lime - 2 - juiced
- Brown sugar - 1 tablespoon
- Vegetable oil - 2-3 tablespoons
- Salt - To taste

Step 1 - π₯ππ‘οΈPrepare your BBQ grill and preheat it to medium heat.

Step 2 - π₯π§β²οΈBoil the potato chunks until just tender, about 5 mins. Then drain and let them cool.

Step 3 - ππΎπ₯£While potatoes are cooling, prepare the marinade. Mix together the finely chopped lemongrass, minced garlic, soy sauce, lime juice, brown sugar, and oil in a bowl.

To embellish the skewers, feel free to add onions, mushrooms, or other seasonal veggies of your choice. You can replace the soy sauce with tamari for a gluten-free alternative.
