Our Winter Radicchio Tart offers a warm solace for the colder temperature, coupled with a French zest. The robust bitterness of radicchio is balanced with creamy goat cheese, and accentuated with caramelised onions and thyme, all enveloped in a crisp pastry crust. This tart is both vibrant and hearty, ideal for a winter main course.
Ingredients (for 4)
- Radicchio - 2 heads - leaves separated and torn
- Goat cheese - 4 oz - crumbled
- Onions - 2 medium - thinly sliced
- Sugar - 1 tsp
- Thyme - 1 tbsp fresh or 1 tsp dried
- Pastry crust - 4 small or 1 large enough for a 9-inch tart pan
- Olive oil - 2 tbsp
- Butter - 1 tbsp
- White wine - 1/4 cup
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - ππ‘οΈπ₯Preheat your oven to 375Β°F (190Β°C).

Step 2 - π³π§ π₯Heat the olive oil and butter in a pan. Add the onions, sugar, and a pinch of salt. Cook on medium heat until onions become golden brown.

Step 3 - π₯π·π₯Increase the heat to high, add white wine, and cook until it evaporates.

Step 4 - πππ§Arrange radicchio leaves evenly on the pastry crust, scatter the caramelized onions on top, followed by the crumbled goat cheese.

Step 5 - ππ§β«Sprinkle the tart with thyme, salt and black pepper, to taste.

Step 6 - ππ°π₯Bake in the preheated oven for about 20 to 25 minutes, or until the crust turns golden and radicchio wilts slightly.

Step 7 - π½οΈπΏπServe the tart warm, as is or with a green salad.
Additional
Radicchio is a chicory variety, revered in Italian cuisine but often underrated. It is an exceptionally good source of Vitamin K. You can experiment with the cheese - a good-quality Brie or Camembert can also work nicely. Plus, itβs a recipe that even kids can help out with, especially with the arrangement of toppings on the tart.
