This is a low-carb take on a Mexican favorite, using in-season winter vegetables to inject a fresh and tasty twist. With the star ingredient being the versatile zucchini, this hearty dinner is boosted with complementary flavors from bell peppers, and garnished with a delightful mix of cilantro and lime.
Ingredients (for 4)
- Medium zucchini - 4 - julienned
- Large red bell pepper - 1 - sliced
- Large yellow bell pepper - 1 - sliced
- Romaine lettuce leaves - 8 - washed and dried
- Feta cheese - 100 grams - crumbled
- Cilantro - 1/2 bunch - finally chopped
- Lime - 2 - cut into wedges
- Olive oil - 2 tablespoons
- Garlic cloves - 2 - minced
- Salt - to taste
- Pepper - to taste
Preparation

Step 1 - 🍳🔥🫒Heat the olive oil in a large skillet over medium heat.

Step 2 - 🍳🧄🔥Add the garlic to the hot oil and sauté until it's fragrant.

Step 3 - 🍳🥒 🫑⏲️Add the julienned zucchini and sliced bell peppers to the skillet. Season them with salt and pepper. Cook for 10-15 minutes, or until the vegetables are tender and slightly caramelized.

Step 4 - 🥬🍽️🥄Place two washed and dried Romaine lettuce leaves on each plate. Spoon the sautéed vegetable mix into the lettuce 'taco shells'.

Additional
You can switch out the zucchinis for any other winter squash or your favorite protein. If you're averse to cilantro, fresh dill could make a good alternative. Children can help wash the vegetables and crumble the feta cheese.
