This unique yet delightfully comforting recipe is centered around the crisp and spicy bite of a radish, hinting at the autumnal ambiance. We add a contemporary twist to the classic Chinese noodle dishes by incorporating seasonal produce, a dynamic blend of spices, and a surprising touch of citrus.
Ingredients (for 4)
- Red radish - 8 - sliced thinly
- Fresh wheat noodles - 750g
- Chicken thigh fillets - 300g - shredded
- Dark soy sauce - 4 tbsp
- Fresh ginger - 1 tbsp - grated
- Garlic - 2 cloves - minced
- Chili flakes - 1 tsp
- Spring onions - 2 - chopped
- Sesame oil - 3 tbsp
- Lime - 1 - for zest
- White sesame seeds - Handful
- Salt - to taste
Preparation

Step 1 - 🍲🍜😋In a large pot, bring water to boil and cook the fresh wheat noodles as per packet instructions. Once done, strain the noodles and set them aside.

Step 2 - 🍳🍗🔥Heat 1 tbsp of sesame oil in a pan over medium-high heat. Add shredded chicken thigh fillets and cook until lightly browned.

Step 3 - 🍲🌶️🍋Add grated ginger, minced garlic, and chili flakes to the pan with chicken. Sauté until the mix becomes aromatic. Then pour in the dark soy sauce, add lime zest, and toss to fully coat the chicken.

Step 4 - 🍜🍗🔄Add cooked noodles into the pan with the chicken. Combine thoroughly with the sauce to ensure the noodles soak up the rich flavors.

Step 5 - 🌶️🥗👅Adjust salt to your taste. Stir in the thinly sliced red radishes until slightly wilted but still crisp.

Step 6 - 🌿🍽️😊Just before serving, garnish liberally with a sprinkle of white sesame seeds and freshly chopped spring onions.
Additional
The tangy radish brings a great crunch when cooked just enough to be slightly wilted. The kids can definitely help out with washing the vegetables and even safe tasks such as stirring the noodles in the pot. If you'd like to go vegan, simply swap out the chicken for tofu or more variety of veggies like bell peppers and broccoli!
