    Heat the olive oil in your paella pan over medium heat. Add the diced Spanish chorizo and cook until browned. Set aside.

    In the same pan, add chopped onions, minced garlic, and diced bell peppers. Sauté until the onions are translucent.

    Add the uncooked short grain rice to the pan, stirring well to coat the grains in the oil. Add a pinch of saffron threads and 1 tsp of smoked paprika.
