- Chopped kale - 2 cups - chopped
- Fresh eggs - 4 - fresh
- Canned diced tomatoes - 1 cup - canned, diced
- Large onion - 1 - finely chopped
- Garlic cloves - 2 cloves - minced
- Small red bell pepper - 1 - finely chopped
- Caribbean seasoning - 2 teaspoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Feta cheese - 100 grams - crumbled
- Fresh cilantro - Handful - for garnish

Shakshuka originated from North Africa and has been popularised in many cuisines around the world. This version adds a Caribbean twist, appealing to those who enjoy a bit of heat in their breakfast. For an added kick, you can also stir in some hot sauce or chopped chili. If kale isn't your thing, you can substitute it with spinach or any other leafy greens you prefer.
