This is our spin on a classic Chinese cuisine with an unexpected keto twist. Using cauliflower as a substitute for traditional rice, this low-carb 'Cauliflower Fried Rice with Crispy Five-Spice Chicken' packs in plenty of flavor with a savory blend of Chinese five-spice and the satisfying crunch of crispy chicken skin.
Ingredients (for 2)
- Cauliflower head - 1 - riced
- Chicken thighs with skin - 2 - boneless
- Chinese five-spice powder - 2 tsp
- Low-carb soy sauce - 2 tbsp or to taste
- Eggs - 2 - whisked
- Spring onions - 2 - sliced
- Small carrot - 1 - diced
- Frozen peas - 1/2 cup - optional for strict keto
- Sesame oil - 2 tbsp
- Sesame seeds - 1 tbsp - for garnish
- Salt - to taste
- Pepper - to taste

Step 1 - 🔥🍗🧂First, preheat your oven to 375°F (190°C). Season your chicken thighs with salt, pepper, and Chinese five-spice. Once seasoned, bake them for about 30 minutes or until the skin gets crispy and chicken is thoroughly cooked.

Step 2 - 🥘🥕🍚While the chicken is in the oven, heat the sesame oil in a large skillet over medium heat. Add the riced cauliflower, diced carrot, and peas. Let them cook for around 5 minutes or until the vegetables become tender.

Step 3 - 🍳🥚🔄Push the vegetable mixture to one side of the pan and pour in the whisked eggs. Allow the eggs to fully cook, then mix them into the vegetable mixture.

Step 4 - 🥄🧂⏲️Add soy sauce into the pan and stir. Adjust the seasoning with salt and pepper if needed, and let it cook for another two minutes.

Step 5 - 🍗🔪😋Take the baked chicken out of the oven. Slice it into pieces and place it on top of the 'fried rice'. Finally, garnish the dish with sliced spring onions and a sprinkling of sesame seeds. Serve it while it's hot.
