A little about this dish
This subtly sweet, light yet satisfying dessert is a twist on the quintessential French dessert, Crème Brûlée. Here we blend the flavor of celery into a custard and pair it with a crunchy Maple Praline for a contrasting texture.
Ingredients (for 2)
- Celery stalks — 2 — finely chopped
- Large egg yolks — 2
- White sugar — ¼ cup plus 2 tablespoons — for the topping
- Heavy cream — 1 cup
- Vanilla extract — ¼ teaspoon
- Salt — A pinch
- Maple syrup — 1 tablespoon
- Roasted pecans — ¼ cup — crushed
Preparation
-
Step 1 — 🔥🌡️👆Preheat your oven to 325°F (165°C).
-
Step 2 — 🥬💦🌪️In a blender, purée the celery with 2 tablespoons of water and strain through a fine sieve.
-
Step 3 — 🥚🍚🥄In a mixing bowl, whisk together the egg yolks, sugar, vanilla extract and a pinch of salt until it turns a pale yellow.
-
Step 4 — 🥣👈🥬Stir in the celery juice until well combined.
-
Step 5 — 🥣🐄🥛Mix in the heavy cream gradually.
-
Step 6 — 🥣➡️🍮💦Pour the mixture into two ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
-
Step 7 — 🔥⌚❄️Bake for 40-45 minutes until the center jiggles slightly. Remove from oven and let cool, then refrigerate for at least 2 hours or overnight.
-
Step 8 — 🍚🔦🔥Before serving, sprinkle 1 tablespoon of sugar evenly on the top of each ramekin. Use a torch to caramelize the sugar until it forms a crispy top.
-
Step 9 — 🍁🥜🍳Combine the maple syrup and crushed pecans in a saucepan over medium heat. Stir until caramelized, then remove from heat.
-
Step 10 — 🍮🥜🍽️Crush the cooled praline and sprinkle over the Crème Brûlée. Serve immediately.
A final fox tip
This dish is a blend of sweet and savory, thanks to the uniqueness of celery. The maple praline not only contributes a added layer of flavor but also a delightful crunch. The dish can be made in advance, making it perfect for dinner parties. For a vegan version, use coconut cream and a substitute for the egg yolks, and replace the sugar topping with a vegan alternative.
