This fusion recipe takes inspiration from Japanese cuisine while adding a delightful twist with chervil, a light anise-flavored herb usually found in European cooking. Ingredients (for 4)
- Chervil - 1 tablespoon - finely chopped
- Soba noodles - 8 ounces - none
- Shrimp - 1 pound - deveined and tails removed
- Bok choy - 1 - chopped
- Edamame beans - 1 cup - shelled
- Red bell pepper - 1 - thinly sliced
- Garlic - 2 cloves - minced
- Soy sauce - 1/4 cup - none
- Teriyaki sauce - 1 tablespoon - none
- Canola oil - 2 tablespoons - none
- Salt - to taste - none
Preparation

Step 1 - πβ πCook the soba noodles according to package instructions and set them aside.

Step 2 - π₯π³π§Heat canola oil in a wok or large pan over medium heat. Add garlic and fry until aromatic.

Step 3 - π₯π€π§Increase the heat to medium-high, add shrimp and cook until pink on both sides, add a pinch of salt while cooking.

Step 4 - π₯¬πΆοΈπ³Add bok choy, edamame, and bell pepper to the wok and stir-fry for 2-3 minutes until the vegetables are tender-crisp.

Step 5 - πππ₯Add the cooked noodles to the wok. Pour the soy sauce and teriyaki sauce over the noodles. Toss everything together, ensuring the noodles and ingredients are well coated with the sauces.

Step 6 - πΏππ½οΈLastly, sprinkle the finely chopped chervil over the stir-fry, give it a final toss and remove from heat.
Additional
Feel free to add additional seasonal vegetables to introduce more colors and flavors to the dish. For a vegetarian version, you can omit the shrimp and add tofu instead. This dish is an excellent way to involve kids in the kitchen - they can help wash and prep vegetables under supervision.
