Ingredients (for 4)
- Arugula - 2 cups - washed and dried
- Shrimps - 1 pound - peeled and deveined
- Chipotle chilies in adobo sauce - 2 - chopped
- Lime - 2 - juiced
- Small red onion - 1 - thinly sliced
- Crumbled queso fresco or feta - 1/2 cup
- Corn tortillas - 8
- Extra virgin olive oil - 2 tablespoon
- Mayonnaise - 1/2 cup
- White vinegar - 1/2 cup
- Sugar - 1 tablespoon
