Taking Southern comforts to an elevated level, we elevate the humble chicken with a cilantro marinade and corn pudding. The cilantro offers an aromatic flair that freshens up this dish.
Ingredients (for 2)
- Cilantro - 2 bunches - chopped
- Boneless chicken breasts, skin on - 2
- Fresh corn kernels - 2 cups
- Whole milk - 1 cup
- Eggs - 2
- Butter - 2 tablespoons
- Maple syrup - 1 tablespoon
- Garlic cloves - 2 - minced
- Limes - 2 - juiced
- Olive oil - 2 tablespoons
- Salt & pepper - to taste

Step 1 - πΏπβ²οΈMix cilantro, garlic, lime juice and olive oil, season with salt and pepper. Marinate chicken breasts for 30 minutes to 1 hour.

Step 2 - π₯πβ²οΈPreheat grill to medium-high heat and cook chicken for 6-8 minutes each side or until internal temperature reaches 165Β°F.

Step 3 - π³π½π§While chicken is grilling, melt the butter in a pan and add the corn kernels. Cook until softened.

Step 4 - π³π₯πΏIn a separate bowl, mix eggs, milk, maple syrup, remainder of the cilantro, salt and pepper. Pour over the cooked corn kernels, mix thoroughly.

Step 5 - π₯π½β²οΈPour mixture into a buttered baking dish and bake at 350Β°F for 25-30 minutes until the top is golden and the pudding is set.

Step 6 - π½οΈππ½Serve grilled chicken with a side of corn pudding, garnished with remaining cilantro and a lime wedge.
Additional
The cilantro and lime in this dish gives an otherwise heavy meal a light, floral note. For a vegetarian dish, substitute chicken with portobello mushrooms, for a meaty yet meatless alternative. Kid friendly suggestion: Invite the kids to help with the marinating and mixing the corn pudding.
