Ingredients (for 2)
- Cilantro — 2 bunches — chopped
- Boneless chicken breasts, skin on — 2
- Fresh corn kernels — 2 cups
- Whole milk — 1 cup
- Eggs — 2
- Butter — 2 tablespoons
- Maple syrup — 1 tablespoon
- Garlic cloves — 2 — minced
- Limes — 2 — juiced
- Olive oil — 2 tablespoons
- Salt & pepper — to taste

Step 1 — 🌿🍗⏲️Mix cilantro, garlic, lime juice and olive oil, season with salt and pepper. Marinate chicken breasts for 30 minutes to 1 hour.

Step 2 — 🔥🍗⏲️Preheat grill to medium-high heat and cook chicken for 6-8 minutes each side or until internal temperature reaches 165°F.

Step 3 — 🍳🌽🧈While chicken is grilling, melt the butter in a pan and add the corn kernels. Cook until softened.

Step 4 — 🍳🥛🌿In a separate bowl, mix eggs, milk, maple syrup, remainder of the cilantro, salt and pepper. Pour over the cooked corn kernels, mix thoroughly.

Step 5 — 🥘🌽⏲️Pour mixture into a buttered baking dish and bake at 350°F for 25-30 minutes until the top is golden and the pudding is set.
