Ingredients (for 4)
- Large eggplant - 2 - sliced into rounds
- Miso paste - 3 tablespoons
- Mirin - 2 tablespoons
- Soy sauce - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Honey - 2 tablespoons
- Sesame oil - 2 tablespoons
- Ripe avocado - 1 - sliced
- Large tomato - 2 - sliced
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Oil - for frying

Step 1 - π₯π―πΏIn a small bowl, whisk together miso paste, mirin, soy sauce, rice vinegar, honey, and sesame oil to make the miso glaze.

Step 2 - ππΏβ°Brush both sides of the eggplant slices with the miso glaze. Let it marinate for 15 minutes.

Step 3 - π³ππ₯Heat oil in a frying pan over medium heat. Fry the eggplant slices until golden brown and crispy on both sides. Place them on a paper towel-lined plate to remove excess oil.
