- Cremini mushrooms - 1 pound - sliced
- Brioche rolls - 4 - uniform size
- White wine - 1 cup - dry
- Dijon mustard - 2 tablespoons
- Thyme - 3 sprigs - finely chopped plus extra for garnish
- Fresh cream - 1/2 cup
- Shallots - 3 - finely diced
- Garlic - 4 cloves - minced
- Olive oil - 2 tablespoons
- Salt - to taste
- Pepper - 1/2 teaspoon
