Happy Chocolate Day! This dessert is a celebration of chocolate and creativity. The core ingredient is high-quality dark chocolate β the rich, bitter sweetness will create an incredible depth of flavor. We'll be partnering the chocolate with almond, sea salt, gold, and dashes of citrus β playful contrasts that enhance and emphasize the chocolate's character.
Ingredients (for 6)
- Dark chocolate - 600g - melted
- Heavy cream - 2 cups - chilled
- Sugar - 1 cup
- Raw almonds - 1 cup - roasted
- Sea salt - 1 teaspoon
- Edible gold leaf - 2 sheets
- Honey - 3 tablespoons
- Orange zest - 1 tablespoon - freshly grated
- Unsalted butter - 3 tablespoons
- Oil - - to grease
Preparation

Step 1 - π₯£π«βοΈGrease dome molds with oil and coat the interiors with melted dark chocolate. Chill until set. For a thicker shell, repeat this process.

Step 2 - π₯π¬π°In a saucepan over medium heat, combine sugar, roasted almonds, and sea salt. Stir until sugar caramelizes and evenly coats the almonds. Pour this mixture onto a lined baking tray and let it cool and harden.

Step 3 - πΆπ₯£π¨Whip the chilled heavy cream and remaining sugar until soft peaks form. Carefully fill the chocolate domes with this whipped cream, but keep some space for the brittle.

Step 4 - π«π₯βοΈBreak the almond brittle into pieces and insert them into the whipped cream-filled chocolate domes. Chill again until the cream becomes firm.
