This recipe is perfect for a low-carb Italian themed dinner for two. It features seasonal vegetables and protein-rich cheese and eggs.
Ingredients (for 2)
- Red bell pepper - 1 - sliced
- Eggplant - 1/2 - sliced
- Small onion - 1/2 - sliced
- Clove garlic - 1 - minced
- Egg - 4
- Heavy cream - 1/4 - cup
- Shredded mozzarella - 1/2 - cup
- Olive oil - 2 - tbsp
- Salt - - to taste
- Pepper - - to taste
