Ingredients (for 2)
- Wild caught large shrimp - 1 lb - peeled and deveined
- Cauliflower - 1 small head - roughly chopped
- Unsalted butter - 2 tbsp - divided
- Garlic - 2 cloves - minced
- Smoked paprika - 1 tsp
- Chili powder - 1 tsp
- Cayenne pepper - 1/4 tsp
- Heavy cream - 1/4 cup
- Grated cheddar cheese - 1/4 cup
- Salt - to taste
- Olive oil - 1 tbsp
Preparation
-
Step 1 - 🥦💻👊Place the cauliflower in a food processor and pulse until it resembles a grainy texture, similar to grits.
-
Step 2 - 🍤🍳🔥In a large pan, heat 1 tablespoon of butter with the olive oil over medium-high heat. Add the shrimp and cook until pink, about 3 minutes per side. Remove from the pan and set aside.
-
Step 3 - 🧄🌶️🍴Add the remaining tablespoon of butter to the same pan, and add the garlic, smoked paprika, chili powder, and cayenne pepper. Cook for 30 seconds or until fragrant.
-
Step 4 - 🥦🔪🍳Add the cauliflower 'grits' to the pan, and stir to coat with the spices and butter. Cook for 5-7 minutes until tender.
-
Step 5 - 🧀🥛🍲Stir in the heavy cream and grated cheese into the pan until the cheese is melted and the grits are creamy.
-
Step 6 - 🍤🥄🥦Add the shrimp back into the pan and stir everything together.
-
Step 7 - 🍽️🍤🥦Divide the grits and shrimp mixture between two bowls and serve hot.
Additional
For a fun twist, try topping the dish with some diced bacon or scallions for added flavor and texture. Kids can help by helping to measure the ingredients, pulsing the cauliflower in the food processor and stirring the grits!
