Ingredients (for 2)
- Grass-fed beef - 500 grams - cut into short thin strips
- Fresh lemongrass stalks - 3 - thinly sliced
- Cayenne pepper - 2 teaspoons
- Sea salt - 1.5 teaspoons
- Black pepper - 1 teaspoon
- Garlic - 2 cloves - finely chopped
- Fresh red chili - 1 - thinly sliced for garnish
- Cilantro - a handful - finely chopped for garnish
- Lime - 1 - cut into wedges for garnish
- Extra virgin olive oil - 2 tablespoons
- Bamboo skewers - 6-8 - pre-soaked in water

Step 1 - π₯©πΏπCombine the grass-fed beef strips, thinly sliced lemongrass, cayenne pepper, sea salt, black pepper and finely chopped garlic in a bowl. Let the mixture marinate for at least 1 hour.

Step 2 - π’π₯©π§΅Thread the marinated beef onto the pre-soaked bamboo skewers, ensuring each skewer has an even amount of beef.

Step 3 - π₯π³π§Pour the extra virgin olive oil into a grill pan and place it over medium-high heat until the oil is shimmering.

Step 4 - π₯π’βPlace the skewers on the grill pan, cooking for 1-2 minutes on each side until the beef is nicely charred.
