Sushi rolls are a classic Japanese dish, but we're spicing it up a bit for International Sushi Day! This recipe features vibrant colors and iconic NYC ingredients like lox and cream cheese.
Ingredients (for 3)
- Sushi rice - 1 cup - cooked
- Rice wine vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1/2 teaspoon
- Lox - 6-8 slices
- Cream cheese - 4 ounces
- Avocado - 1 - thinly sliced
- Cucumber - 1 - thinly sliced
- Carrots - 2 small - julienned
- Nori sheets - 3-4 sheets
- Soy sauce - - for serving
- Wasabi - - for serving
- Pickled ginger - - for serving

Step 1 - ππΆπ₯’In a small bowl, whisk together rice wine vinegar, sugar, and salt until dissolved. Add the cooked sushi rice and mix well until evenly coated with the vinegar mixture.

Step 2 - π±π₯π₯π₯ͺπ£Lay a sheet of nori, shiny side down, on a sushi mat or piece of plastic wrap. With wet hands, spread a thin layer of rice evenly over the nori, leaving a 1-inch border at the top of the sheet. Press the rice down firmly. Arrange the lox, cream cheese, avocado, cucumber, and carrot slices in a line down the center of the rice.

Step 3 - π―πͺπ½οΈHolding the filling in place with your fingers, use the mat or plastic wrap to roll the sushi tightly from the bottom to the top. Press the top border of rice down to seal the roll. Repeat with the remaining nori sheets and filling. Using a sharp, wet knife, trim the ends of each roll. Slice each roll into 6-8 pieces.

Step 4 - π½π₯’π±Arrange the sushi pieces on a plate to resemble the NYC skyline. Serve with soy sauce, wasabi, and pickled ginger for dipping.

Did you know that sushi wasn't originally served with soy sauce or wasabi? You can also customize this recipe with your favorite veggies or even swap out the lox and cream cheese for cooked shrimp or tofu for a vegetarian option. And don't forget to get kids involved in the rolling and assembly process!
