Sushi rolls are a classic Japanese dish, but we're spicing it up a bit for International Sushi Day! This recipe features vibrant colors and iconic NYC ingredients like lox and cream cheese.

    In a small bowl, whisk together rice wine vinegar, sugar, and salt until dissolved. Add the cooked sushi rice and mix well until evenly coated with the vinegar mixture.

    Lay a sheet of nori, shiny side down, on a sushi mat or piece of plastic wrap. With wet hands, spread a thin layer of rice evenly over the nori, leaving a 1-inch border at the top of the sheet. Press the rice down firmly. Arrange the lox, cream cheese, avocado, cucumber, and carrot slices in a line down the center of the rice.

    Holding the filling in place with your fingers, use the mat or plastic wrap to roll the sushi tightly from the bottom to the top. Press the top border of rice down to seal the roll. Repeat with the remaining nori sheets and filling. Using a sharp, wet knife, trim the ends of each roll. Slice each roll into 6-8 pieces.

    Arrange the sushi pieces on a plate to resemble the NYC skyline. Serve with soy sauce, wasabi, and pickled ginger for dipping.
