In celebration of Mardi Gras, we're taking a spin on the traditional Jambalaya, a classic southern comfort food from the heart of Louisiana. The key ingredients are a trio of bell peppers, Andouille sausage, and shrimp, which meld together to create a symphony of flavors.
Ingredients (for 4)
- 1 red bell pepper - 1 - diced
- 1 green bell pepper - 1 - diced
- 1 yellow bell pepper - 1 - diced
- Cloves of garlic - 3 - minced
- 1 onion - 1 - chopped
- 2 andouille sausages - 2 - cut into thin slices
- Fresh or frozen shrimp - 400g - peeled and deveined
- Diced tomatoes - 1 can - None
- Long-grain white rice - 1 cup - None
- Chicken broth - 2 cups - None
- Cajun seasoning - 1 tablespoon - None
- Dried thyme - 1/2 teaspoon - None
- Dried oregano - 1/2 teaspoon - None
- Olive oil - 2 tablespoons - None
- Salt - to taste - None
- Edible glitter in pink, green and purple - optional - None
- Parsley - for garnish - finely chopped
Preparation

Step 1 - 🍳🔥🍖Heat olive oil in a large pan over medium heat. Add the sausage slices and cook until browned. Remove the sausage slices and set them aside.

Step 2 - 🍲🌶️🎉In the same pan, add the onion, red, green, and yellow bell peppers, and garlic. Cook until they soften.

Step 3 - 🍅🍚🌿Stir in the diced tomatoes, rice, chicken broth, Cajun seasoning, thyme, and oregano. Bring to a boil.

Step 4 - 🔥⏲️🍲Reduce heat to low, cover the pan, and let it simmer for about 20 minutes, until the rice is cooked.

Step 5 - 🍤✨🥣Stir in the shrimp and cooked sausage slices, and cook until the shrimps turn pink. Season it with salt to taste, and sprinkle parsley on top.

Step 6 - 🎊✨🍽️If you're feeling festive, finish the dish with a sprinkle of edible glitter in Mardi Gras colors: green, purple, and pink. Serve hot.

Jambalaya is a Creole dish with Spanish and French influence. It's versatile and allows for endless twists. Feel free to add chicken or other kinds of seafood, or make a vegetarian version using seitan or tofu. Kids can help with stirring in the ingredients and sprinkling the edible glitter.
