This Mediterranean-inspired dish has flavors of Chinese cuisine. It features seasonal vegetables and lean protein, fitting perfectly with a Mediterranean diet.
Ingredients (for 4)
- Boneless, skinless chicken breast - 1 lb - sliced into strips
- Bell pepper - 2 - sliced into strips
- Zucchini - 1 - sliced into half moons
- Red onion - 1 - sliced
- Garlic - 2 cloves - minced
- Kalamata olives - 1/4 cup - halved
- Olive oil - 2 tbsp
- Soy sauce - 1 tbsp
- Honey - 1 tbsp
- Balsamic vinegar - 1 tbsp
- Dried oregano - 1 tsp
- Cooked brown rice - 4 cups
- Salt - to taste
- Black pepper - to taste
Preparation

Step 1 - 🍯🍴🍅In a small bowl, whisk together the soy sauce, honey, balsamic vinegar, and oregano.

Step 2 - 👨🍳🍗🍳Heat the olive oil over high heat in a large wok or skillet. Add the chicken strips, and stir-fry until lightly browned and cooked through, about 5 minutes.

Step 3 - 👨🍳🥦🥕Add the bell peppers, zucchini, onion, and garlic, and stir-fry for an additional 3-5 minutes, until the vegetables are tender-crisp.

Step 4 - 🍅🫒🍴Pour the sauce over the stir-fry and add the halved olives. Stir to coat everything with the sauce.

Additional
For a vegetarian option, substitute the chicken with tofu. You can also customize the vegetables based on what's in season. Kids can help by measuring out and whisking together the sauce ingredients, as well as slicing the olives with a butter knife.
