Today, we're fusing classical Mediterranean flavors with the vibrant richness of Mexican cuisine. Albeit an unusual combo, this recipe brings together the best of both worlds in a delightful yet healthy dish. We're keeping everything light and savory with the use of fresh seasonal vegetables, ensuring a meal that aligns with a Mediterranean diet.
Ingredients (for 2)
- Quinoa - 1 cup - cooked
- Bell peppers - 2 - sliced
- Zucchini - 1 medium - sliced
- Red onion - 1 medium - sliced
- Cherry tomatoes - 200g
- Ripe avocado - 1 - diced
- Feta cheese - 100g - diced
- Coriander - a handful - chopped
- Lime - from 2 limes - juiced
- Olive oil - 2 tablespoon
- Chili powder - 1 teaspoon
- Salt and white pepper - to taste

Step 1 - π₯π«πGrill the bell peppers, zucchini, red onions and cherry tomatoes until charred and tender.

Step 2 - ππΆοΈπ§Mix the cooked quinoa with chili powder, salt, white pepper, and juice from one of the limes.

Step 3 - π₯π§πIn a different bowl, combine the diced avocado, feta cheese, and the juice from the remaining lime.

Step 4 - π₯£π½οΈπStart with the spiced quinoa, add the grilled vegetables, and then the avocado and feta mixture.

Additional
You can easily make this dish vegan by substituting the feta cheese with a vegan option, or simply leaving it out. Feel free to get creative with your veggies based on what's fresh at your local market. Kids can help with washing and prepping the veggies or assembling the bowls.
