Albeit an unusual combo, this recipe brings together the best of both worlds in a delightful yet healthy dish. We're keeping everything light and savory with the use of fresh seasonal vegetables, ensuring a meal that aligns with a Mediterranean diet.
Ingredients (for 2)
- Quinoa — 1 cup — cooked
- Bell peppers — 2 — sliced
- Zucchini — 1 medium — sliced
- Red onion — 1 medium — sliced
- Cherry tomatoes — 200g
- Ripe avocado — 1 — diced
- Feta cheese — 100g — diced
- Coriander — a handful — chopped
- Lime — from 2 limes — juiced
- Olive oil — 2 tablespoon
- Chili powder — 1 teaspoon
- Salt and white pepper — to taste
