- Oyster mushrooms - 2 cups - cleaned
- Sourdough bread - 4 slices - thickly cut
- Fresh ricotta cheese - 1 cup
- Heirloom cherry tomatoes - 1/2 cup - halved
- Kalamata olives - 1/4 cup - halved
- Fresh thyme leaves - 2 tablespoons
- Honey - 1 tablespoon
- Pine nuts - 2 tablespoons - toasted
- Extra virgin olive oil - 2 tablespoons
- Sea salt - to taste
