New Year's Celebration calls for a special dish to start the day on a blissful note. The recipe is compiled from ingredients that signify prosperity, good health and joy, such as green vegetables and grains.
Ingredients (for 4)
- Vanilla greek yogurt - 1 cup
- Large egg - 1
- Whole wheat flour - 1 cup
- Baking powder - 1 teaspoon
- Baking soda - 1/2 teaspoon
- Salt - 1/4 tablespoon
- Non-stick cooking spray -
- Champagne mangos - 2 - ripe, peeled and diced
- Granulated sugar - 1/2 cup
- Champagne or sparkling white wine - 1/4 cup
- Unsalted butter - 1/2 cup
- Honey - 1/4 cup
- Ground cinnamon - 1/2 teaspoon
- Pomegranate seeds - - for garnish
Preparation

Step 1 - π§π―π₯Melt the butter and mix it with honey and cinnamon in a bowl. Set aside for later use.

Step 2 - π₯£π₯π₯In a different bowl, stir together the Greek yogurt and egg. Add flour, baking powder, baking soda, and salt and stir until they are just mixed.

Step 3 - π³π₯πHeat a griddle or non-stick pan, coating it lightly with cooking spray. Scoop spoonfuls of pancake batter onto the heated surface and cook until bubbles appear. Flip each pancake and finish frying.

Step 4 - π₯πΎπ₯In a small saucepan, combine champagne, sugar, and diced mangos, and simmer on low heat until the sauce thickens into a compote.

Step 5 - π₯π―π₯ππStack the cooked pancakes and top with honey cinnamon butter. Spoon the champagne mango compote onto the pancakes and sprinkle them with pomegranate seeds to finish.
Additional
Can be adapted to Vegan by using non-dairy yogurt and substituting honey with maple syrup and butter with coconut oil. It's fun for kids to help stack the pancakes and sprinkle the pomegranate seeds.
