What better way to celebrate National Peanut Day than with an iconic American dish! Our main star today is the peanut - not only a bit crunchy, but also subtly sweet and packed with protein. We're going to fuse American cuisine with some Asian influence to create a visually striking dish that is as tasty as it is eye-catching.
Ingredients (for 4)
- Unsalted, dry roasted peanuts - 1 cup - finely crushed
- Skin-on salmon fillets - 4 pieces - none
- Broccoli - 2 cups - steamed and pureed
- Edamame - 1 cup - boiled
- Teriyaki sauce - 1/2 cup - reduced to a glaze
- Pink pickled ginger - a handful - for garnish
- Ground black pepper - to taste - none
- Kosher salt - to taste - none
- Olive oil - 2 tablespoons - none

Step 1 - 🔥🌡️⏳Preheat your oven to 400°F (200°C).

Step 2 - 🐟🧂🫒Season the salmon fillets with salt and pepper and brush each piece with a bit of olive oil.

Step 3 - 🐟🥜✋Press the top of each salmon fillet into the crushed peanuts, ensuring a good, even coat.

Step 4 - 🐟🥜🔥Line a baking tray with parchment paper, place the peanut crusted salmon fillets skin-side down onto the tray, and bake for about 15-18 minutes (until salmon is cooked through and peanuts are golden.)

Step 5 - 🥦🍛🍽️While the salmon is baking, heat your broccoli puree and prepare your plate. Smooth a generous dollop of broccoli puree on the plate, scatter some edamame, then rest a piece of cooked salmon atop the puree.

Step 6 - 🐟🥣🍱Drizzle the reduced teriyaki sauce around and over the salmon. Finish with a garnish of pickled ginger.
