Welcome to the New Year and a fresh start! We're visiting the heart of America by creating a lavish, celebratory breakfast twist on New York's iconic bagel and lox. Our hero ingredients are smoked salmon and cream cheese, with a bouquet of vibrant, colorful toppings providing a stunning visual and gastronomic punch; it's the 'New York Sunrise Bagel Breakfast Board'.

Ingredients (for 4)

  • Smoked salmon200 grams
  • Multigrain and everything bagels4
  • Cream cheese200 gramsRemove from fridge for room temperature
  • Tomatoes2Thin slices

Preparation

    Bring water to a simmer in a pan. Add a splash of vinegar and create a whirlpool with a spoon. Gently drop one egg at a time into the whirlpool and poach for 3-4 minutes for a soft yolk. Remove with a slotted spoon and set aside.

    While your eggs are poaching, toast your multigrain and everything bagels until they are golden brown.

    Fan the bagel slices across part of your serving board. Arrange clusters of smoked salmon, cream cheese, sliced tomatoes, onion rings, capers, chopped fresh dill, lemon wedges, poached eggs and diced avocados around the bagels.

    Serve immediately, enabling your guests to assemble their own bagels as per their preferred taste.
