Our recipe takes inspiration from the quintessential Spanish dish, the Paella, but with a radical Paleo-friendly twist. The shining star of this recipe is the cauliflower, which will serve as a lower-carb, Paleo-approved stand-in for the classic arborio rice. Alongside it, we'll use grass-fed Andalusian-style chorizo, wild shrimp, and a delightful variety of winter vegetables for that comforting warmth.

Preparation

  1. Step 1 - 🔥🍳🍖
    Heat the extra-virgin olive oil in a large paella pan or skillet over medium heat. Add the grass-fed chorizo sausages, sliced, and cook them until they are slightly crispy. Remove the cooked chorizo from the pan and set it aside.
  2. Step 2 - 🍳🧅🧄
    In the same pan, add the chopped organic red onion and minced garlic. Sauté them until they become translucent.
  3. Step 3 - 🥦🥣🌶️
    Add the cauliflower, processed into rice-like pieces, turmeric, smoked paprika, salt, and pepper to the pan. Stir until all the ingredients are well combined.
  4. Step 4 - 🌶️🥦🍳
    Now add the chopped, fire-roasted organic bell peppers, organic snow peas, and return the cooked chorizo to the mix. Cook everything for another 5 to 7 minutes.
  5. Step 5 - 🍤🍳🔥
    Make space in the middle of the pan and add the wild shrimp - peeled and deveined. Cook them until they turn pink.
  6. Step 6 - 🍋💦🥘
    Right before serving, squeeze fresh lemon juice over the paella and garnish with extra lemon wedges.

For a fun variation, consider adding other Paleo-friendly proteins like mussels or chunks of chicken. Kids can help by washing the vegetables and squeezing the lemon juice over the finished dish.
