Our Provencal Plum Tarts are a unique twist on a French classic. Crunchy, sweet and tangy, these individual plum tarts are inspired by the freshness of the season, featuring ripe summer plums. The tart's crumbly crust paired with the luscious plum filling makes for a delightful surprise.

- Ripe plums - 8 - pitted and sliced
- Ready-made shortcrust pastry - 4 sheets - roughly 7-inch diameter
- White granulated sugar - 1/2 cup
- Butter - 2 tablespoons - melted
- Fresh thyme - 1 teaspoon - finely chopped
- Egg - 1 - beaten
- Powdered sugar - - for dusting
- Fresh mint leaves - - for garnish
- All-purpose flour - - for dusting
