This recipe reimagines classic French Ratatouille with a pasta twist. We're featuring fresh, seasonal green beans for a crunch, supplemented with sundried tomatoes for a unique aspect. Bon appétit!
Ingredients (for 4)
- Green beans - 1 Cup - trimmed and halved
- Linguini pasta - 200g
- Large aubergine - 1 - diced
- Large courgette - 1 - diced
- Bell pepper - 1 - diced
- Sundried tomatoes - ½ Cup - sliced
- Cloves garlic - 2 - minced
- Freshly grated parmesan cheese - 1 Cup
- Fresh cilantro leaves - ¼ Cup - chopped
- Olive oil - 2 Tablespoons
- Salt - to taste
- Freshly ground black pepper - to taste
Preparation

Step 1 - 🍝💦🧂Boil the linguini pasta in lightly salted water until it's al dente. Once done, drain the pasta and set it aside for later use.

Step 2 - 🍳🔥🧄Heat the olive oil in a large pan over medium heat. Add minced garlic to the pan and sauté until it becomes fragrant.

Step 3 - 🍆🥒🌶️Add the diced aubergine, courgette, and bell pepper to the pan, and sauté until the vegetables are tender. This should take about 10 minutes.

Step 4 - 🍅🌱🧂Stir in the halved green beans and sliced sundried tomatoes to the pan. Add salt and ground black pepper to taste, then continue to cook for another 5 minutes.

Step 5 - 🍝🥘🥗Toss the previously set aside cooked linguini into the vegetable mixture, ensuring everything is well combined.

Additional
To make it vegan, simply substitute Parmesan with a vegan-friendly cheese. You can get the kids involved by letting them sprinkle the cheese and cilantro on top!
