Ingredients (for 4)
- Green beans — 1 Cup — trimmed and halved
- Linguini pasta — 200g
- Large aubergine — 1 — diced
- Large courgette — 1 — diced
- Bell pepper — 1 — diced
- Sundried tomatoes — ½ Cup — sliced
- Cloves garlic — 2 — minced
- Freshly grated parmesan cheese — 1 Cup
- Fresh cilantro leaves — ¼ Cup — chopped
- Olive oil — 2 Tablespoons
- Salt — to taste
- Freshly ground black pepper — to taste

Step 1 — 🍝💦🧂Boil the linguini pasta in lightly salted water until it's al dente. Once done, drain the pasta and set it aside for later use.
