Today we’re taking a soul-warming, gluten-free spin on Spanish cuisine! Our star ingredient is the seasonal butternut squash, offering a sweet, nutty flavor that complements the dynamic, smoky paprika and zesty citrus touches, creating a unique blend of comfort and pizzazz.

    Preheat your oven to 400°F (200°C). Toss butternut squash with 2 tablespoons of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for about 25-30 minutes until tender and slightly caramelized.

    In a large pan, heat 2 tablespoons of olive oil over medium heat. Add garlic and cook until fragrant, about 30 seconds. Stir in red bell pepper and cook for another 2-3 minutes.
