We're going local and exciting with this meal, bringing in a star ingredient, cauliflower, to shine in this comforting, seasonal recipe!
Ingredients (for 2)
- Large cauliflower - 1 - cut into 1½ inch thick steaks
- Mixed wild mushrooms (chestnut, oyster, cremini) - 2 cups - cleaned and thinly sliced
- Garlic cloves - 4 - minced
- Medium onion - 1 - finely chopped
- Fresh thyme sprigs - 2 - leaves stripped
- Vegetable broth - 1 cup
- Dijon mustard - 1 tablespoon
- Olive oil - 4 tablespoons
- Salt and pepper - to taste

Step 1 - 🔥🌡️🕓Preheat the oven to 400°F.

Step 2 - 🥦🧂🫒Brush both sides of the cauliflower steaks with 2 tablespoons of oil and season them with salt and pepper.

Step 3 - 🥦🔥⏰Arrange the steaks on a lined baking sheet and roast for 20 minutes. Turn over cauliflower and continue roasting for an additional 15 minutes until they are browned and tender.

Step 4 - 🧄🍳🔥Heat the remaining oil in a pan. Add the onion and garlic, and sauté until they soften.

Step 5 - 🍄🌿🔥Add the mushrooms and thyme to the pan, and cook until mushrooms turn golden brown.

Step 6 - 🍲🥣🌡️Stir in the broth and mustard into the pan. Let it simmer until the sauce thickens.

Step 7 - 🧂🍲🔥Season the mushroom ragout with salt and pepper.

Step 8 - 🥦🍲🍴Spoon the mushroom ragout over the roasted cauliflower steaks and serve hot.
