
Scallion-Infused Thai Corn Fritters

Here's a Thai-inspired snack that's sure to wow with its bold, savory, and spicy flavors - complete with the star of the dish, scallions. This recipe is a twist on the traditional Thai corn fritter, packed with fresh scallions to add a pop of color and a mild oniony flavor that balances the sweetness of corn.
Ingredients (for 2)
- Scallions - 6 - finely chopped
- Sweet corn kernels - 1 cup - fresh or canned
- Red chili - 1 - deseeded and finely chopped
- Smashed garlic - 2 cloves
- Organic unbleached flour - 1/2 cup
- Egg - 1 - beaten (alternative: vegan egg substitute)
- Baking powder - 1 tsp
- Coconut milk - 1/4 cup
- Lime - 1 - wedge
- Thai sweet chili sauce - to serve
- Vegetable oil - for frying
- Salt - to taste

Step 1 - 🌽🥣🥚In a mixing bowl, combine 1 cup of sweet corn kernels, 6 finely chopped scallions, 1 deseeded and finely chopped red chili, 2 cloves of smashed garlic, 1/2 cup of organic unbleached flour, 1 tsp of baking powder, a beaten egg (or vegan egg substitute), and a pinch of salt. Stir to create a well-combined batter.

Step 2 - 🍳🔥🥄Heat vegetable oil in a frying pan over medium heat. Once heated, drop tablespoons of batter into the hot oil. Fry each side of the fritters for 2-3 minutes, or until they are golden brown and crispy. Use a slotted spoon to remove the fritters and drain them on a paper towel-lined plate.

Step 3 - 🍽️🌶️🍋Serve the fritters warm with a side of Thai sweet chili sauce. Garnish with a lime wedge.
