Ingredients (for 2)
- Scallions — 6 — finely chopped
- Sweet corn kernels — 1 cup — fresh or canned
- Red chili — 1 — deseeded and finely chopped
- Smashed garlic — 2 cloves
- Organic unbleached flour — 1/2 cup
- Egg — 1 — beaten (alternative: vegan egg substitute)
- Baking powder — 1 tsp
- Coconut milk — 1/4 cup
- Lime — 1 — wedge
- Thai sweet chili sauce — to serve
- Vegetable oil — for frying
- Salt — to taste

Stir to create a well-combined batter.
